Food is central to Mexican life and culture, and Cinco de Mayo celebrations are no exception! From a bueno breakfast to satisfying snacks, or the perfect margarita pairing, your Cinco de Mayo menu doesn’t have to break the bank. Our staff submitted their favorite Cinco de Mayo recipes that can easily be made in the kitchen space at your InTown suite. We hope you enjoy!
Huevos Rancheros
Start the 5th of May off right with this Mexican breakfast staple. Fry up some tortillas until crispy and top with canned beans (black or refried work well), salsa, fried eggs, and fresh avocado. Try your hand at making your own fresh salsa, or keep it simple with the store-bought variety. Need to go gluten free? Swap out flour tortillas for corn. Get the recipe here.
Mexican Rice
This super side dish will go a long way at any Cinco de Mayo party you attend. Ready in just 30 minutes, this dish can be made with either white or brown rice and comes together quickly on the stovetop with an affordable mix of fresh garlic and frozen veggies. Add steak or chicken to make a meal of it. Get the recipe here.
Stovetop Carnitas
An InTown Suites Staff Favorite – Submitted by Derrick C, Atlanta South (ZFP) Extended Stay property
Carnitas, or ‘little meats’, are a one-pot-wonder. It’s an excellent recipe to feed a lot of people for less. Boneless pork shoulder and a few simple ingredients combine to create a dish that won’t dent your savings account. You’ll need to simmer the meat two to three hours to fully develop that great carnitas flavor, but the best things really do come to those that wait. Get the recipe here.
Cheesy Taco Skillet
Skip the taco shells and get to the good stuff with this cheesy taco concoction that’s easy to prepare on a stovetop. Ground beef and all the usual suspects combine to create a hearty, melty masterpiece that might leave you needing a siesta after digging in. For a healthier alternative, substitute the beef for chicken or turkey, or make a veggie version with a vegetarian ground round product. Get the recipe here.
Rainbow Salsa
There’s sure to be plenty of guacamole at most Cinco de Mayo celebrations, so add to the dip display with this fresh, colorful take on salsa. It’s packed with peppers, black beans, corn, and red onion, and can be adjusted for your preferred heat level. Poblano peppers add a warm, but less intense heat for a mild version, or kick it up a notch by adding diced jalapeños. The best part? No cooking required! Get the recipe here.
Classic Margarita
The best way to keep your Cinco de Mayo budget under control is to stick to simple ingredients—cocktails included. Blanco tequila, orange liqueur, and freshly squeezed lime juice are all you need to make a classic margarita. Prepare a pitcher beforehand and you’ll have more time to mingle or take another swing at the piñata. Get the recipe here.
Margarita Fruit Dip
An InTown Suites Staff Favorite, Submitted by Tangi R, Nashville/Madison (YNT) Extended Stay property
This fun dip packs a punch of margarita flavor that everyone can enjoy. Mix together cream cheese, whipped cream and frozen margarita mix, then serve with fresh fruit to create a healthy dessert that’s guaranteed to garner a few olé’s! Serve in a large bowl, or get creative by spooning in to margarita glasses rimmed with colored sugar. Get the recipe here.
